Ask how a new crew member learns the sanitation protocol at your busiest facility, then ask the same question about your newest site. If the answer is some version of “they shadow someone for a few days,” that’s word-of-mouth training, and word-of-mouth training drifts. Details get skipped, shortcuts get passed down as normal practice, and six months later two sites are technically running the same protocol but actually doing meaningfully different things.
